In our winemaking, we aim to combine successful tradition with modern technology. Grapes are gently destemmed for our whites and basic red wines. Red wines are fermented in open top fermenters. Our highest quality grapes ferment in wooden vats or barrels.
Thanks to the constantly controlled and supervised natural process of fermentation and ageing we are able to preserve the purity of the varietal fruit.
The wine maturation takes place in Burgundy barrels in different vaulted cellar rooms in our house, built in 1882.
